Instructions
  1. Pre-heat oven to 350 degrees F
  2. Coat a 9x13 inch baking dish with non-stick spray or oil
  3. Saute sausage in a non-stick pan, if desired. If using pre-cooked sausage this isn't necessary. However, I liked the flavor from the cooked sausage.
  4. Whisk together eggs and egg whites
  5. Add in sausage, shredded potatoes and spinach
  6. Mix well
  7. Pour into baking pan
  8. Bake for about 45 - 50 minutes or until the middle is set
  9. Serve hot, warm or cold.
