This is my favorite meal prep for a busy week! It’s simple to make and tastes delicious.

Ingredients

  • 1 cup cherry tomatoes
  • 1 bell pepper
  • ½ red onion
  • ½ cucumber
  • 2 heads of romaine lettuce
  • ⅓ cup feta cheese
  • 1 lb chicken fajita
  • Primal Kitchen Greek Dressing

Instructions

  1. Chop up the romaine lettuce, cucumbers, bell pepper, and red onion.
  2. Next, add the lettuce to all containers then a handful of the cherry tomatoes, bell pepper, cucumber, and onion.
  3. Take the bag of pre-cooked chicken fajita and add it to the top of the salad and sprinkle with the feta cheese.
  4. Fill a smaller container with the dressing and keep it with the salad.
