I recently came across this festive cookie recipe and decided to give it a try! I added in protein powder so I can enjoy a treat and still hit my macros. They do not disappoint!

These cookies are made from scratch using only natural ingredients. They're gluten free and vegan friendly too!
Ingredients
- 2 cups almond flour
- 1 scoop of your favorite protein powder
- 1 tablespoon cornstarch
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 teaspoon ginger
- 1 teaspoon cloves
- 1 teaspoon nutmeg
- 1 cup unsalted butter, Depending on the thickness of your protein powder, you may need to add more butter
- â…“ cup coconut sugar
- 1/4 cup maple syrup
- 1 large egg
- 2 teaspoons almond extract
- 1 scoop of your favorite protein powder
Instructions
- Preheat the oven to 400 degrees and line a cookie sheet with foil.
- In a medium size mixing bowl, combine the protein powder, flour, cornstarch, baking soda, coconut sugar, and all the seasonings.
- Take a separate bowl, whisk together the butter, almond extract, egg and maple syrup.
- Next, slowly fold the wet ingredients into the dry and mix thoroughly. (Depending on the thickness of your protein powder, you may need to add more butter).
- Take the dough and form small ball sized cookies and place them on the cookie sheet.
- You should have approximately 12 cookies
- Bake for 12-15 minutes.
- Place into a container and enjoy throughout the week
