Crunchy, Savory, Sweet, and fresh... what more could you ask for in a salad meal prep?
Ingredients
- 2 carrots, medium sliced into coins
- 1 apple (large), large cut into thin slices
- 1/2 tbsp extra virgin olive oil
- 1/2 lemon, squeezed
- 1/2 tbsp honey
- 2 tbsp walnuts, chopped
- 1 tbsp fresh chopped parsley
- salt and pepper to taste
Instructions
- Wash carrots and apple. Prepare as per instructions above
- Add carrots and apples to med sized bowl
- Pour oil, honey, lemon juice and walnuts
- Mix well
- Add salt and pepper to taste (optional)
- Place in container or dish, top with parsley and you're all set!
- Simply double ingredients to make more. Add more lemon juice if left overnight to prevent borrowing.
- Enjoy!
